France is especially known for its food specialties. Here is one you might not be familiar with, it’s the Andouillette, a kind of sausage made out of pork bowels which main distinctive sign is its smell of shit. But, believe me! it’s awfully good and tasty! You can find Andouillettes in different regions of France and, in the North of France, we have the Andouillette de Cambrai, made of veal instead of pork. To have a taste of it, you can go to Le Georget, a little café in the center of Arras (see here my pictures of Arras), where Marie-Jo will prepare it for you every saturday noon.
